Sitting at one of our tables, accompanied by delicate music in the background and the discrete attention of our staff, we want to take you on a journey of flavor and surprise that begins with inviting entrees and ends with an aromatic coffee, where the wine could be, if you want, your stimulating companion.
The dishes are created to leave you with an unforgettable memory, using a mixture of unique flavors and smells, that will make you want to return and embark on another journey.

What you will find in my dishes is a combination of all the techniques and preparations that I have seen throughout my culinary journey, with a consistent French influence. Seasonal products, with respect to every single ingredient. A kitchen of substance, that still uses a pan and spoon.

Despite his young age, the Genoese chef now at the head of Hostaria counts significant experiences alongside great comtemporary masters such as Alain Ducasse of Paris, Ferran Adrià of Barcellona and Davide Oldani of Venice
From these fortunate and stimulating experiences he has learned important lessons, techniques and concepts that he uses to create his dishes.
On 5 July 2023 he excelled in the important selection of Emergente Chef 2024 organized by Luigi Cremona. In March 2024 the National Finals will take place at ALMA – International School of Italian Cuisine.
His idea of cuisine is refined and elegant, with hints of innovation and international influence, never neglecting tradition because his food always remainsseasonal and of substance.
He wants to surprise you through dishes with few ingredients , chosen with care and precision, where the raw material is always respected and at the center of the dish.
Sweet, crunchy, savory, acidic: each element must play their precise role, so he can reach his final goal: equilibrium.

The raw materials
We dedicate a lot of time searching for the right ingredients, which we always put at the center of our work.
We respect seasonality and we are sensitive to the sustainability of the products that we use.
We only use animal products from farms where the animals are free to graze in open pastures,
We also pay attention to the orgin of our ingredients, trying to use as many products as possible from our rich territory of Liguria.
In fact, we believe that the production chain is essential to receive an excellent product and to bring a decisive and sincere taste to each ingredient used in your dish.
